    Hello friends! So glad to welcome you back to my channel! Today I’ll share with you one of my favorite recipes, baked sweet potatoes with chickpeas. Start with three medium sweet potatoes. Wash them carefully under running water, then peel the skin with a knife orpeeler. Cut each sweet potato into four equal pieces. Tell me in the comments which city you’re watching this video from. I’d love to know. Place the sweet potato pieces into a large bowl. Season with black pepper and a little salt. Add your favorite spices, I’m using a mix of Pravasal herbs today, and finish with a touch of smoked paprika. Pour in 3 tablespoons of soy sauce. Cut a lemon in half and squeeze out the juice. Then pour in 3 tablespoons of olive oil. Mix the sweet potatoes well with the spices and oil. Friends, we may never meet here again, so subscribe now and I’ll always be close! Line a baking sheet with parchment paper. Spread the marinated sweet potato pieces on top. Arrange them in two rows, leaving half the tray free for the next steps. Add 200 grams of boiled or canned chickpeas into the bowl with the leftover marinade. Stir well until they’re coated. Spread them on the tray beside the sweet potatoes and distribute evenly. Put the tray into a preheated oven at 200 degrees Celsius (400°F) and bake for 30 minutes. Take 200 grams of ricotta cheese, traditional or vegan, and place it into a deep bowl. Add 2 cloves of garlic, finely grated or pressed. Chop 50 grams of your favorite nuts, I’m using walnuts today, and mix them in as well. If you prefer, replace them with any other nuts you like. Add two or three sprigs of fresh mint, or use another herb of your choice. Basil or cilantro also work beautifully. Chop the mint finely and add it to the bowl with the ricotta and nuts. Grate some lemon zest, about 2 tablespoons is enough. Squeeze the juice from half a lemon. Add black pepper and a little salt. Mix everything together until well combined. Finely chop one red onion. Yellow or shallots work too. Take four to five cloves of garlic. Oops, a flying one. Mince them as well. Pour 2 tablespoons of olive oil into a pan. Add the chopped onion and garlic. Stir and saute for a few minutes until golden. Add 80 grams of spinach to the pan. Stir the vegetables gently. Season with black pepper and a little salt. Mix well and turn off the heat. Meanwhile, the sweet potatoes and chickpeas are baked to perfection. The aroma is just wonderful. Time to assemble everything on a plate. Begin with the sauteed spinach and onion, spreading it evenly on one side. Add a few pieces of roasted sweet potato next to it. Scatter the golden chickpeas on top.     Black pepper – to taste
    Salt – to taste
    Herbes de Provence – 1/4 teaspoon (1 g)
    Smoked paprika – 1/4 teaspoon (1 g)
    Soy sauce – 3 tablespoons (45 g)
    Lemon juice – 2 tablespoons (30 g)
    Olive oil – 3 tablespoons (45 g)
    Chickpeas, boiled or canned – 200 grams (~7 oz)
    Ricotta cheese (traditional or vegan) – 200 grams (~7 oz)
    Garlic – 2 cloves (10 g)
    Walnuts – 50 grams
    Fresh mint – 5 grams
    Lemon zest – 2 tablespoons (12 g)
    Lemon juice – 2 tablespoons (30 g)
    Salt – to taste
    Red onion – 1 medium (130 g, ~4.5 oz)
    Garlic – 4–5 cloves (20 g)
    Olive oil – 2 tablespoons (30 g)
    Spinach – 80 grams
    Black pepper – to taste
    Salt – to taste
