Recipe for Sweet Potato Pancakes
Ingredients:
1½ Cups Mashed Roasted Sweet Potato (from about 2 Medium Sweet Potatoes)
1 Cup All-Purpose Flour
2 Eggs
¾ Cup Whole Milk (plus 1–2 Tbsp more if needed)
4 Tbsp Unsalted Butter, melted
1 tsp Vanilla Extract
1 tsp Baking Powder
2 Tbsp White Sugar
¾ tsp Salt
½ tsp Cinnamon
⅛ tsp Grated Nutmeg (optional)

Steps:
1. Poke holes in two sweet potatoes and roast at 400°F for about 1 hour and 15 minutes, until soft. Let cool slightly, then peel and mash in a large bowl. Measure out 1½ cups of mashed potato.

2. Add eggs, milk, vanilla, and melted butter to the mashed sweet potato. Mix very well to create a smooth base before adding dry ingredients.

3. In a separate bowl, combine flour, baking powder, sugar, salt, cinnamon, and optional nutmeg.

4. Add the dry ingredients to the wet and gently fold with a spatula until just combined. Do not overmix. Add 1–2 tablespoons of milk if the batter is too thick—it should be thick but spoonable.

5. Heat a large nonstick skillet over medium heat without oil or butter. Drop in large spoonfuls of batter and gently flatten with the back of the spoon.

6. Cook undisturbed for 3–4 minutes until the bottoms are golden and the tops begin to look dry. Flip and cook the other side for about 2 minutes.

7. Transfer to a plate and repeat with remaining batter. Makes about 12 pancakes total. Serve with maple syrup and butter

  1. I was looking for a sweet potato hoe cake recipe and I found this. Looks like it will work for a standard pancake. I'm sure I can adapt it to a hoe cake. I've got enough of the sweet potato and wet ingredients already mixed to allow me to try both types. Thanks
