This has been going viral and I see why 👏 such an easy breakfast or really any meal of the day! Delicious, easy to change up and only takes a few minutes to make.
You can also prep the mixture the night before and just add to the tortilla and bake in the morning. Super easy to make and also packs a ton of protein, veggies and is also delicious!

Ingredients
1 large tortilla
3 eggs
1/4 cup low fat cottage cheese
1/4 tsp salt 
black pepper, to taste
1/2 cup chopped veggies of choice, I used baby spinach, mushroomed and sun dried tomato
2-3 tbsp cheese

Directions
Preheat oven to 350 degrees. Press a large tortilla into an 8 inch round pan. I used a springform pan. Add eggs and cottage cheese to the tortilla and mix. Then add salt and pepper and veggies, mix and top with cheese. Bake for 20-25 minutes and slice into pieces.
