Bacon, Leek and Asparagus Quiche with Sweet Potato Crust… easy, delicious and no complicated pie crust! Perfect for breakfast meal-prep and call me crazy but think it tastes even better cold the next day. I used beef bacon and coconut milk but you can switch it up with whatever you like (lots of substitution ideas on the blog)
