1 pancake – approximately 88-92 kcal.
Ingredients:
2/3 cup (80 g) rolled oats
Salt, to taste
1/2 tsp dried garlic
2/3 cup (150 g) Greek yogurt
3 eggs
2 tbsp finely chopped green onions
2 tbsp finely chopped fresh parsley
1 zucchini (300 g), grated
1 tbsp olive oil
1/2 cup water (or as needed)
For serving:
1/2 tbsp cream cheese per pancake
1/6 avocado
2 slices smoked salmon
Lettuce leaves
Instructions:
Grind the oats in a blender
Mix with salt, dried garlic, Greek yogurt, eggs, green onions, and parsley
Add the grated zucchini
Add the olive oil and enough water to create a pancake batter consistency
Lightly grease a skillet with olive oil
Cook the pancakes on both sides over low heat until golden
Repeat with the remaining batter
Makes 8 pancakes
Serve with cream cheese, avocado, smoked salmon, and lettuce

If I had it on hand could I sub shallots for green onion if finely minced? Also, I love daikon radish raw or cooked. Different from red radishes. Could I shred daikon radish in place of the zucchini? Daikon is juicy and so delish! I also used serious herbs. Soooo yummy!
P.S. so happy that rolled oats are the only type I buy. Always on hand.
