    They are crispy on the outside, chewy on the inside, and bursting with bright lemon zest and refreshing mint — a surprisingly delicious combination that makes these cookies feel light and fresh.

    Ingredients:
    1 heaped cup (120g) oat flakes.
    1/2 cup (60g) oat flour (almond, wheat).
    Almonds.
    1/2 tsp baking soda.
    1 egg.
    Vanilla extract.
    Banana.
    Lemon zest.
    1 tsp fresh ginger.
    Sweetener to taste.
    2 tbsp lemon juice.
    Mint.
    1 tbsp coconut oil.
