🥞 Ingredients (Serves 2-3):
1 cup rolled oats (or oat flour)
1 ripe banana (adds natural sweetness)
1 scoop plant-based protein powder (vanilla or unflavored)
1/2 cup almond milk (or any plant-based milk)
1 tbsp flaxseed meal (mix with 2.5 tbsp water for a flax egg)
1/2 tsp baking powder
1/4 tsp cinnamon (optional, for extra flavor)
Pinch of salt
🥞 Toppings (Choose your favorites):
Fresh fruits: Blueberries, banana slices, or strawberries 🍓
Nut butter: Almond or peanut butter 🥜
Maple syrup or agave nectar 🍯 (optional)
Chia seeds or hemp hearts for extra crunch
🧑🍳 Instructions:
1. Mix flaxseed meal with water in a small bowl and let it sit for 5 minutes until it thickens.
2. Add oats, banana, plant protein powder, almond milk, baking powder, cinnamon, and a pinch of salt to a blender. Blend until smooth.
3. Heat a non-stick pan over medium heat and lightly grease it with a bit of coconut oil. Pour 1/4 cup of batter for each pancake. Cook until bubbles appear on the surface, then flip and cook the other side until golden brown.
4. Stack the pancakes and top them with your favorite toppings.
