    Recipe (Adapted from Gina B Nutrition’s Mince Pie Overnight Oats):
    Ingredients:

    1/2 cup rolled oats
    1 tbsp chia seeds
    3/4 cup unsweetened almond milk (or any plant-based milk)
    1 tbsp maple syrup
    1/2 tsp ground cinnamon
    1/4 tsp ground nutmeg
    2 tbsp mincemeat (vegan-friendly, store-bought or homemade)
    1 tbsp chopped nuts (e.g., almonds or walnuts)
    Optional: 1 tbsp vegan yogurt for topping
    Instructions:

    In a jar or bowl, combine the rolled oats, chia seeds, almond milk, maple syrup, cinnamon, and nutmeg. Stir well to mix.
    Add the mincemeat and stir until evenly distributed.
    Cover and refrigerate overnight (or at least 4 hours) to let the oats soak and soften.
    In the morning, give it a good stir. If it’s too thick, add a splash of almond milk.
    Top with chopped nuts and a dollop of vegan yogurt, if desired.
