📌 Ingredients & Full Recipe:
4-5 spotted bananas
3 tbsp ground flaxseeds
9 tbsp warm water
1.5 cups organic coconut sugar
1 cup organic soy milk
3/4th cup grapeseed oil (or avocado)
2 tsp vanilla extract
3.5 cups organic flour (all purpose or Spelt)
1.5 tbsp baking powder (Aluminum Free)
1/2 tbsp baking soda
pinch of salt
3/4 cup vegan chocolate chips
Instructions:
Preheat oven to 350 F. or 180 C.
Start by preparing your flax egg: Combine 3 tbsp flax with 9 tbsp warm water, mix, and set aside.
In the meantime, in a bowl, mash 4-5 ripe bananas. Add the rest of the wet ingredients: oil, milk, vanilla. Mix very very well with a whisk until all incorporated. Only then add the flax egg. Mix again.
Sift all the dry ingredients, the flour, baking powder, baking soda, salt, and at the last batch add the chocolate chips to the sifting flour.
Mix everything very well, until no lumps, however don’t overwork the batter.
Transfer to 2 loaf pans lined with parchment paper, or muffin pan, bake the loaf for 45-50 minutes, and the muffins for about 30 minutes. Check with a wooden stick.
Remove from the oven and let the loaf cool completely!
Slice and enjoy.
Store in a cold place in an airtight container over night, or in the fridge up to 5 days. Warm for 30 seconds before serving.
