How to make ★Japanese Cheesecake★スフレチーズケーキの作り方(EP25)
Today, I will show you how to make Japanese Cheesecake, as known as Cotton cheesecake or Souffle cheesecake.
Fluffy and moist, the texture is eating like a cloud. But it still tastes so much cheese!
But actually, the cake is very tricky.
Read ( or watch video ) carefully, and do exactly what I do!
Ingredients for 5-inch-cake-mold
100g (3.5oz) creamcheese
20g (0.7oz) granulated sugar
100g (3.5oz) milk
2 egg yolks
20g (0.7oz) cake flour
20g (0.7oz) cornstarch
2 egg whites
40g (1.4oz) granulated sugar
Juice of 1/2 lemon
Zest of 1 lemon
A pinch of salt
1 teaspoon of vanilla

Hello, I also have 8inch cake pan. I was wondering if you would know the exact conversions to US metrics (cups, tbsp) to make this recipe come out right. I saw that you recommend to multipy by 3 for 8 inch pan, so that would mean 10.5 oz cream cheese for the one cake..? I know baking requires exact measurements. Also, would the baking time and temperature change if we use bigger cake pans? I greatly appreciate your expertise on this recipe and thank you in advance for calculating the right measurements!
I found mine had very delicate taste when I made it. I really enjoyed it but wasn't what I expected sometimes I wish I could get some baked goods from Japan so I can have reference so know I did it right. Baking is my bane…
I love your videos. I can tell correct english is important to you, so I offer this correction. At 2:03 when you say the sugar "melts", you want the word "dissolve". Melt implies heat was used.
Hello! I made a vegan version of your cheesecake and it came out great! It took me a few attempts to get the baking correct but I did it. No animals products were used. You can see a picture of it on my Instagram @a_fabulous_50.
My cake collapsed. Why? It collapsed even before I take it out of oven. (It still tastes nice though)
