前回作った桜スポンジケーキを使って、簡単で美味しいいちごと桜のレアチーズケーキを作りました。ボトムは普通のスポンジや、ビスケットとバターで作るのでも美味しいので、ぜひ作ってみてください♪ 簡単な作り方ですが、苺はピュレにしなくても小さくカットすることで生地との一体感が出るし、フレッシュな味と食感が楽しめます。
【材料】直径15㎝ 1台分
桜スポンジケーキ (径18㎝・厚さ1-1.5㎝) 1枚
粉ゼラチン 6g(+水40g)
クリームチーズ 200g
グラニュー糖 60g
ギリシャヨーグルト 100g
生クリーム 100g
レモン汁 5g
キルシュ 5g
(苺と桜のゼリー)
粉ゼラチン 4g(+水20g)
グラニュー糖 20g
水 160g
桜パウダー 少々
キルシュ 5g
いちご 5-6個
[Ingredients] Diameter 15 cm
Sakura sponge cake (diameter 18 cm, thickness 1-1.5 cm) 1 piece
Powdered gelatin 6g (+ 40g of water)
Cream cheese 200g
Granulated sugar 60g
Greek yogurt 100g
Fresh cream 100g
Lemon juice 5g
Kirsch 5g
(Strawberry and sakura jelly)
Powdered gelatin 4g (+ 20g of water)
Granulated sugar 20g
Water 160g
Sakura powder a little
Kirsch 5g
Strawberries 5-6 pieces

As ever, the technique here is gorgeous. I've spent years trying to get perfectly aligned fruits in gelatine – and never once have I thought to just place the fruit in shallow jelly and then add more jelly over it after it had cooled to achieve the proper aesthetic. We are talking three decades of me not understanding something that now appears incredibly obvious! (I now have a red mark on my forehead because I've been smacking it so hard!)
SAKURA UPDATE: I've found a place in the UK where I can buy it. But it's more expensive than saffron (which, by weight, costs more than gold or diamonds in Britain!) So, I'm not sure whether I'll buy it because I think it's too expensive to experiment with. However, my not-official goddaughter has a friend coming from Japan, so I might insist the friend brings a big packet of sakura with her in return for taking them to a really expensive restaurant when London re-opens. (Or I might give them Amazon gift tokens – old people's bribery has to come in all sorts of different guises.)
Anyway, it's good to be old. And I look forward to being able to make mistakes with sakura sometime in the next year.
