Homemade strawberry cake ๐Ÿ“

    Madeleine sponge

    112g melted butter
    135g flour all purpose
    62g icing sugar
    2 salt
    6g baking powder
    135g whole eggs
    75g honey mountain
    30g milk
    5g lemon zests
    Sift all the dry Ingredients together, mix the whole eggs and honey to have foamy texture. Add the dry ingredients continue mixing then add the milk and finish with the melted butter. Reserve the batter 5 hours in the fridge before baking it.

    Punch strawberry

    250g water
    100g sugar
    50g strawberry purรฉe
    2g vanilla beans
    Boil the water, vanilla and sugar. Add the cold purรฉe and reserve in the fridge for overnight.

    Strawberry compote

    230g strawberry purรฉe
    270g raspberry purรฉe
    20g glucose
    4g pectin NH
    25g sugar
    4g lemon juice
    10g orange blossom water
    Simmer the purees, glucose and add the premixed pectin and sugar cook to 90 degrees then add the lemon juice and orange blossom water. Cool down and scale 200g of confit add 350g fresh strawberries cut into small cubes, reserve.

    Whipped honey Vanilla ganache

    206g cream UHT
    5g vanilla pods
    12g glucose
    12g honey
    2g sea salt
    163g ivory chocolate
    206g cream UHT 35%

    Simmer the cream, vanilla glucose and honey. Let infuse for 20 minutes. Pour over the melted chocolate mix to create a good emulsion. Add the cold cream mix and reserve in fridge for 12 hours before using.
