This wholesome #Buckwheat-#Oats Banana cake is soft, naturally sweet, and packed with delicious flavors! Made with ripe bananas, crushed pineapple or blueberries. It’s a perfect guilt-free treat. Enjoy it for breakfast or as a snack with your favorite tea or coffee!
Ingredients:
• 3 cups buckwheat flour or oats flour
• 2 cups sugar (or adjust to taste; I use 1 ¼ cups)
• 1 tsp baking soda
• 1 tsp cinnamon powder
• 1 cup chopped nuts (optional, I use walnuts)
• 3 eggs, beaten
• 1 ½ cups vegetable oil (I reduce to 1 cup or ¾ cup)
• 2 cups ripe mashed bananas (about 4 bananas)
• 1 small can crushed pineapple or blueberries
• 2 tsp vanilla extract
Instructions:
Preheat oven to 350°F (175°C). Grease loaf pans.
Bake for 1 hour and 5 minutes, or until a toothpick inserted in the center comes out clean.
Allow to cool before slicing.
