egg yolk, for egg wash

○乳酪內餡 Filling

奶油乳酪 180 g
cream cheese, 180 g

鮮奶油 100 g
heavy cream, 100 g

糖 35 g
sugar, 35 g

切達起司 2 片
sliced cheddar, 2

檸檬汁 1 小匙
lemon juice, 1 tsp

玉米粉 1 小匙
cornstarch, 1 tsp

香草籽醬 1/2 小匙
vanilla bean paste, 1/2 tsp

●Making the Cheese Mixture
1. Heat water in a small saucepan and place a large mixing bowl on top to create a double boiler.
2. Add cream cheese and sugar to the mixing bowl.
3. Mix until combined and smooth.
4. Add heavy cream.
5. Mix until combined and smooth.
6. Tear the sliced cheese into small pieces and add them to the mixing bowl.
7. Mix until melted, combined, and smooth.
8. Add cornstarch, lemon juice, and vanilla bean paste.
9. Mix until well combined.

●Preheating the Oven to 375℉/190℃
10. Add the cheese mixture to the crust.
11. Smooth out the surface.
12. Brush the egg yolk onto the surface.
13. Transfer to the preheated oven.
14. Bake at 375℉/ 190℃ for 15 min.
