In this episode, Chef Stephane uses Tahitian Vanilla Bean Paste for its pair-ability with fruit and to round out the tartness of passion fruit in his “cremeux” insert. Chef also uses Madagascar Ground Vanilla Beans into his white chocolate for bold flavor and visual appeal.
