ピンク系のチューリップを見ていたら、ベリーを使ったケーキが焼きたくなり、冷凍ベリーミックスを使ってケーキを焼いてみました。
思いの外さっぱりとした爽やかなケーキに仕上がりました。暑い夏にはケーキに生クリームやアイスクリームを添えてもくどくなく美味しく頂けると思います。

材料

無塩バター 80g
上白糖 80g
アーモンドパウダー 30g
卵 2個
バニラビーンペースト 小さじ1/2
薄力粉 100g
ベリーミックスの果汁 30ml
冷凍ベリーミックス 150g
アーモンドフレーク 15g

作り方 10x20cm パウンドケーキ型

1.バターをクリーム状にします。
2.砂糖、アーモンドパウダーを加えて混ぜます。
3.溶いた卵を少しずつ加え、その都度よく混ぜ合わせます。
4.バニラビーンズペーストがあれば、加えて下さい。
5.薄力粉を加えて混ぜ、途中ベリーミックスから出た果汁と水切りしたベリーミックスを入れて混ぜ合わせます
6.型に生地を入れて、表面にアーモンドフレークをのせます
7.170°cに予熱したオーブンで45分焼きます。

How to make 10x20cm pound cake mould

1.Cream the butter.
2.Add the sugar and almond powder.
3.Add the beaten eggs a little at a time, mixing well each time.
4.Add the vanilla bean paste, if available.
5.Add the flour and mix, adding the juice from the berry mix and the drained berry mix on the way.
6.Pour the batter into the moulds and place the almond flakes on the surface.
7.Bake in a preheated oven at 170°c for 45 minutes.
