【絶対家にあるアレを使います】生クリーム無し!全卵使用でとろっととろけるプリン

Be careful when making caramel as it is easy to burn or injure yourself. Divide the caramel evenly. You can definitely clean the egg liquid by filtering it. Since it contains egg whites, if you don’t filter the egg whites, the leftover egg whites will solidify as they are. I don’t have a strainer, so I use a tea strainer instead. If you are worried about bubbles on the surface, wipe it off with an alcohol spray! Boil water in a pot. Lower the heat to just barely keep it boiling. If you don’t have a steamer, put a towel on the bottom. A simple steamer is now complete! Add the pudding, but it will be hot, so be sure to lower the heat before doing so. Wrap the lid with a cloth so that the steam on the lid does not escape. Do not allow the cloth to hang outside. Start the timer in 3 minutes. Turn off the heat after 3 minutes. Leave as it is for 10 minutes. After 10 minutes, take out the pudding. If the center is still liquid, steam again for an additional minute. When the rough heat is removed, let it cool down. Melt-in-your-mouth smoothness without fresh cream! The trick is to properly thicken the milk with potato starch. And it is recommended to make it by steaming! I tried many times to see if it could be done in the microwave, but the uneven heating would inevitably result in crumbly areas. Steaming sounds like a hassle, but you can make multiple batches at once, and you don’t have to watch carefully, so it’s actually easier! Note the size of the eggs. A large, expensive egg contains a lot of egg white. If the egg is large, reduce the egg white so that one egg weighs 50g. If you use it as it is, it will become a normal pudding that is too hard and not too thick! We recommend small eggs, which are the most affordable at the supermarket. It’s healthy and wallet-friendly, so please try it.

【レシピ】

*カラメル 2個分

砂糖 30g
水  5cc

*プリン 2個分

牛乳 180cc
片栗粉 4g
水   8cc
たまご 1個
砂糖  20g

とろけるプリンが食べたい!でも生クリームが家にない!という時でも家にあるもので作ることができないかと何度も試してできたプリンのレシピです。

片栗粉あり、なしではかなりとろっと具合に差が出ます!
さらに卵白が余らないよう全卵使用にしました。
倍量ならそれぞれの分量を倍にしてください。

動画内でも紹介していますが、
・牛乳にきちんととろみをつけること
・たまごは1個50g程度の小さめサイズ、もしくは50gになるよう、卵白で調整すること、
・レンジで作らず、蒸して作ること、

がポイントです。

たまごはMSサイズならだいたい50g前後です。
Mサイズだと卵白の固まる力が強いので卵白を減らしてください。
微妙な量の卵白が残ってしまいますが、冷凍保存もできるので卵料理に加えて使って下さい。
