The Best Chocolate Cake Recipe with Decadent Chocolate Frosting

This is the first video of the year, and it’s a chocolate cake. The sponge cake is easy to make by separating the egg whites and yolks, and it’s moist and fluffy thanks to the syrup. The chocolate frosting is also rich.

■Sponge cake 0:20
3 egg whites
100g sugar
50g cake flour
3 egg yolks
20g cocoa powder
30g whipping cream
170 degrees Celsius (338 degrees Fahrenheit) for 35 minutes

■Chocolate frosting 3:33
200g heated whipping cream
150g chocolate with 57% cacao content
250g whipping cream

■Syrup 5:01
100g water
50g sugar
Rum to taste

■Chocolate glaze 7:48
50g whipping cream
35g water
30g sugar
20g cocoa powder
2g powdered gelatin
10g water (to add to the gelatin)

■Decoration 9:34
Raspberries
Nuts
Cocoa nibs, etc.

  1. After I add 200 gr of heated cream to 150 gr of dark chocolate , the consistency is runny, unlike in the video. I wonder if I should continue adding the rest of 250 gr

  2. I am not used to making frostings. I ran into the mistake of pouring the 250g whipping cream into the melted choclate and whipping cream mixture. Beginers mistake, it's supposed to be a ganache.
    @Emojoie can you correct the recepie?

    スポンジはバターが入っていないせいかもっさりで…
    えもじょわさんの様に生地の状態を見慣れてる人以外は、別のバター入りレシピの方が美味しく出来ると思います

  6. Idk what im doing wrong i tried 1. Failed to hard 2.passed but didn't look fluffed liked in video. 3. Fluffed but small 4. Tried whipping the egg whites they turned runny when added the hvy cream . 5. I add cream tart to egg whites before whisking they turn perfect and i wisk my egg yolks separately . And whipped the hvy cream turns out great . But never like his.
    What am i doing wrong?

    カカオパウダーはピュアココアで代用できますか?
    グラサージュのココアは普通に飲む砂糖入りのココアでいんでしょうか?

  10. 上掛けのグラサージュが少し固まり過ぎて綺麗に流れなかったなく😢もう少し早く掛けたら良かったな
    ケーキが冷たい事を忘れてました
    トッピングのクリームをスプーンですくうのは少し難しかったですが何とか完成しました とてつもなく美味しかったそうです

  11. 4回ほど生クリームの方を30%の植物性生クリームでこのケーキ作らせていただいているのですが、ナッペの時どうしてもダレてきれいにできません…
    こまめに冷蔵庫に入れたり強く立てようと多めにホイップするとこんどはボソボソに、植物性ではなくやはり動物性の生クリームの方が良いのでしょうか?
