Custard oats!!! Such an easy way to make your oats more nutritious & delicious

Ingredients
1/2 cup old fashioned rolled oats
-1 cup water (or milk)
-1 to 2 eggs*
-pinch of salt
-vanilla extract or vanilla bean
-a little bit of cinnamon or any other warm spices you enjoy
Notes:
1. I usually do 2 eggs per serving, but if you’d like it a little less custardy than do 1 egg. Either way is delicious!
2. If you’d like to make this in a microwave: first cook one serving of oats, then right after they’re done cooking slowly drizzle in the whisked egg(s) while whisking quickly.
INSTRUCTIONS:
1. Combine oats, water, and salt in a large pot. Turn on the heat and cook the oats following the instructions on the container. Make sure you cook them long enough for all of the water to be absorbed.
2. Meanwhile, whisk your eggs in a separate bowl until very well combined.
3. Once the oats are nice and thick and fully cooked, turn off the heat and remove the pan from the heat source. Immediately start drizzling in the egg(s) while whisking the oats quickly. We need to heat to cook the eggs but we don’t want to scramble them. Keep mixing until everything is well combined. Then mix in maple syrup, vanilla, and cinnamon. Continue stirring for a few minutes and then let sit for 5 minutes before serving so it can set! It might be a little runny at first but it should set up more after resting. Enjoy with your favorite toppings! I topped this bowl with raspberry sauce, crunchy pistachio butter, apple bananas, strawberries, and flakey salt 🙂
