A delicious cake filled with apple and flavored with vanilla & cinnamon. A cup of tea, and here you’ll have it! I did feel a little in France while having the first slice… The kind of slice we can get in a Bistro served with some vanilla ice cream while having a hot cup of tea. Excellent recipe.
Ingredients.
Nonstick cooking spray, for the pan
3 Granny Smith apples (about
1½ pounds), halved and cut into ½-inch-thick wedges
Mcintosh apples (about
1 pound), halved and cut into
½-inch-thick wedges
1 tablespoon fresh lemon juice
3 cups all-purpose flour
1/ teaspoons baking soda
¼ teaspoon kosher salt
1/ teaspoons ground cinnamon
4 large eggs
2 cups granulated sugar
1 cup vegetable oil
½ cup orange juice
2½ teaspoons pure vanilla extract
Confectioners’ sugar, for dusting
**Instructions**
1. Preheat the oven to 350°F. Coat a 9×13-inch baking pan with cooking spray. Line with parchment, leaving an overhang on two sides.
2. In a large bowl, toss the apples with the lemon juice and set aside.
3. In a medium bowl, whisk together the flour, baking soda, salt, and 1 teaspoon of the cinnamon.
4. In another large bowl, whisk together the eggs, granulated sugar, oil, orange juice, and vanilla.
5. Add the flour mixture to the egg mixture and whisk together until it is just combined. Mix in half of the apples.
6. Spread the batter into the prepared pan.
7. Arrange the remaining apples on top. Sprinkle with the remaining ½ teaspoon cinnamon.
8. Bake until a toothpick inserted in the center comes out clean, 55 to 60 minutes.
9. Cool in the pan for 15 minutes, then, using the overhangs, transfer the cake to a wire rack to cool completely.
10. Dust with confectioners’ sugar.

– Bake for 15 minutes, then set aside to cool slightly.
*2. Prepare the Apples:*
– Peel, core, and cube the apples (or slice them thinly if preferred). Drizzle with lemon juice to prevent browning and set aside.
*3. Make the Almond Cream:*
– In a bowl, whisk together the melted butter, almond flour, sugar, heavy cream, and almond extract until smooth.
*4. Assemble the Pie:*
– Scatter the cubed apples evenly over the pre-baked puff pastry.
– Sprinkle the brown sugar between the apple pieces.
– Pour the almond cream mixture evenly over the apples, making sure it fills the gaps between the fruit.
*5. Bake the Pie:*
– Bake for 30-35 minutes at 380°F (190°C), or until the apples are tender, the almond cream has set, and the puff pastry is golden brown.
*6. Serve:*
– Let the pie cool slightly before slicing.
– Serve warm or at room temperature with a scoop of vanilla ice cream or a dollop of whipped cream.
– For an extra touch, dust lightly with powdered sugar before serving.

*Note:* If you prefer a flatter pie, you can lay the puff pastry flat on a baking sheet instead of using a pan. Preheat and bake as directed above. Spread the almond cream, arrange a thin layer of apple slices, and sprinkle brown sugar here and there. Bake as instructed.
