BANANA CHOCOLATE CHIP PROTEIN MUFFINS | BREAKFAST IDEAS | BARIATRIC MEAL PREP

INGREDIENTS
2 cups of Kodiak Pancake/Waffle Mix
1 large egg
1/4 cup of sugar (I used Splenda Magic Baker)
2 ripe bananas (approx 209g)
1 teaspoon of vanilla extract
1 teaspoon of ground cinnamon
1 cup of milk (I used Fairlife Fat Free)
1/2 cup of chocolate chips (I used the Lily’s brand)
Nonstick cooking spray

Bake in 350 degree Fahrenheit oven for approx 22 minutes. Let cool in pan and then transfer to cooling rack.
