For the Roasted Veggie Potatoes:
• 1 medium red potato 🥔, diced (leave the skin on for fiber)
• 1/2 cup mixed bell peppers (red, yellow, green) 🌶️, diced
• 1/2 small red onion 🧅, diced
• 1 tablespoon avocado oil 🥑 (or olive oil)

Instructions:
1. Roast the Potatoes and Veggies:
