These Sweet Potato Stacks have all the vibes of a classic sweet potato casserole presented in irresistible mini stacks, with a crumby streusel topping and lots of caramelized edges aka the best part of roasted sweet potatoes imo!
INGREDIENTS
For the Garlic Brown Butter:
½ C (114g) unsalted butter
3 cloves garlic, minced
1 tbsp chopped fresh thyme (or other herb such as rosemary, sage or oregano)
1 tsp kosher salt (increase to 2 tsp if using Diamond Crystal brand)
¼ tsp cinnamon
Black pepper to taste
For the Sweet Potato Stacks:
3 lb (1360g) orange sweet potatoes, sliced 1/16” thick
½ C (50g) grated parmesan cheese
Neutral oil for brushing muffin tin
For the Streusel Topping:
2 strips of bacon, cut into approx. 1 cm squares
¼ C (33g) all-purpose flour
1 tbsp light or dark brown sugar
1 tbsp maple syrup
1/8 tsp kosher salt (increase to ¼ tsp if using Diamond Crystal brand)
¼ C (25g) finely chopped pecans
