hello! Today I will bake bread using pumpkin. Bread ingredients are listed in the description. Make the filling first. Use powdered white bean paste. After adding water and bringing it to a boil, add sugar and boil down to complete white bean paste. Of course, you can also make paste from white beans. Add lots of sugar and very little salt. Heat again to evaporate the moisture. sugar is dissolved. It’s okay if it’s about this much. Measure how much you will use. Add the pumpkin to the white bean paste. Cut the pumpkin. Remove pumpkin skin. Put it in a heat-resistant container and heat it in the microwave. It ‘s okay if the pumpkin becomes soft . Mash it with a fork. Use 100g each for both filling and dough. Add white bean paste and sugar to a pot or frying pan and heat. It will harden as it cools, so turn off the heat when it is a little soft. Adding a little cinnamon is also delicious. My hobby is taking walks. Next, make the bread dough. Add sugar and salt to a large bowl and mix gently. Today, I’m going to try molding in the shape of a pumpkin. Yeast is used by dissolving it in lukewarm milk. This is 100g of just mashed pumpkin. Add eggs, yeast and milk and mix. Adjust the amount of milk depending on the pumpkin. Knead the dough on the work surface. Milk can be added later. I added a little too much milk today and it’s sticky. When the dough becomes elastic, slam it against the board. Then add unsalted butter. Knead until it is no longer sticky. Hit the bread dough again on the work surface. Because fluffy bread needs gluten. It’s okay if you can stretch it thin like this. Keep dry and let it ferment until it doubles in size. Divide the pumpkin and white bean paste into 8 portions. It’s a very beautiful natural color. Divide the bread dough into 8 pieces. First, measure the total weight of the bread dough. Be gentle with the dough as it can damage the dough. Degas lightly and roll into balls. Let it rest for about 15 minutes so it doesn’t dry out. Then shape it. Remove the gas and arrange them with the seam facing up. Next, add the pumpkin paste. Wrap the pumpkin paste. Be careful not to crush the filling inside. First, cut deeply from four directions with scissors. Then cut a little shallower in between. I feel like this. Thinking up bread recipes is so much fun. I can’t wait to see how it’s baked. ▼かぼちゃパン 8個分
●パン生地材料
強力粉 200g
ドライイースト 小さじ1
砂糖 15g
塩 3g
全卵 30g
かぼちゃ潰したもの 100g
無塩バター 10g
牛乳 65~85ml
●かぼちゃ餡材料
白あん 200g
かぼちゃ潰したもの 100g
砂糖 20g
シナモン ほんのちょっと
●作り方メモ
1次発酵 約2倍になるまで 30℃/86℉で一時間くらい
8分割して15分ほどベンチタイム
成形は丸め直して8か所ハサミでカット(動画参照してね)
2次発酵は35℃/95℉で40~50分が目安。ひとまわりふっくらしたらオッケー
仕上げに小麦粉をふり、かぼちゃの種を飾って190℃/374℉で12~14分焼いたら出来上がり♪
