Yummy cinnamon oatmeal raisin muffins with cinnamon oil!!
Soak 1/2 cup oats in 1 cup buttermilk overnight.
Lightly beat 1 egg, then add oat mixture, 1/2 cup brown sugar, 1 tsp vanilla, 1 tsp cinnamon, 2 Tbsp veg oil, 1/4 tsp salt, 1/2 cup raisins, and 3 drops dōTERRA cinnamon essential oil.
Stir in 1 cup light whole wheat flour, 1/2 tsp baking powder, and 1/2 tsp baking soda.
You’ll have a lumpy dough. Do not over mix.
Bake 15-20 minutes @375°.
