無香料のホットケーキミックスがありまして、これならホットケーキの味らしくない、薄力粉から作るケーキと変わりなく出来ると思いまして、このレシピになりました。
ベーキングパウダーとお砂糖が少し入っていて、さらに粉を振るわなくても良いし、泡立て器でぐるぐると混ぜるだけ。
バターが分離したー！とかの失敗もなく超簡単にできました。

少し風味が違ってくるとは思いますが、香料入りのホットケーキミックスでも大丈夫ですよ！！

材料 10x20cm パウンドケーキ型

無塩バター 100g
グラニュー糖 50g
卵 2個
レモンの皮 1個分(無農薬のものがお勧め）
ホットケーキミックス 150g
バニラオイル 数滴 （香料入りのホットケーキミックスなら入れない）

シロップ
レモン汁 30ml
砂糖 10g

アイシング
粉糖 50g
レモン汁 小さじ2から3
ピスタチオ 飾りとして

作り方
1.バターを溶かします。
2.ボウルにバター、グラニュー糖、卵、レモンの皮、ホットケーキミックスを入れて、泡立器で混ぜ合わせます。
3.170°に予熱したオーブンで40分焼きます。
4.レモン汁と砂糖を合わせて、砂糖が溶けるまでよく混ぜます。
5.焼き上がったケーキに竹串で穴をあけ、温かいうちにシロップをかけます。
6.ケーキが冷めたら、アイシングをかけます。ピスタチオを飾ります。

I have an unflavoured pancake mix and I thought this would be a recipe that doesn’t taste like a pancake and is no different to a cake made from flour.
It has a little baking powder and sugar, plus you don’t have to shake the flour and just mix it in a circular motion with a whisk.
The butter separates! and it was super easy to make without any mistakes.

I know the flavour will be a little different, but you can use flavoured pancake mix too!

Ingredients 10x20cm pound cake mould

100g unsalted butter
50g granulated sugar
2 eggs
Zest of 1 lemon (pesticide-free is recommended)
150 g pancake mix
A few drops of vanilla oil (not included in flavoured pancake mixes)
Pistacchio for garnish

Syrup
30 ml lemon juice
10 g sugar

Icing
50 g powdered sugar
2 to 3 teaspoons lemon juice

How to make
1. melt the butter.
2.In a bowl, combine the butter, granulated sugar, eggs, lemon zest and pancake mix with a whisk.
3. Bake in a preheated oven at 170° for 40 minutes.
4. combine the lemon juice and sugar and mix well until the sugar dissolves.
5. Poke holes in the baked cake with a bamboo skewer and pour the syrup over the cake while it is still warm.
6.When the cake has cooled, pour over the icing. Decorate with pistachios.
