Super easy to make Ham and Cheddar Muffins. These are best warm out of the oven. Serve for breakfast or an afternoon snack. A great recipe if you have leftover ham!
Ingredients:
1 1/2 cups baking mix (such as Bisquick)
1 1/2 cups cheddar cheese (I like sharp cheddar)
1 large egg
1/2 cup milk
2 tbsp melted butter
1/2 tsp onion powder (optional)
1 cup of chopped ham
Preheat oven to 425 and coat a muffin pan with non-stick cooking spray.
In a large bowl combine baking mix and cheese. In a small bowl whisk egg with milk, then mix in melted butter and onion powder.
Add this mixture to the dry ingredients and stir until just combined.
Fill muffin cups 3/4 full and sprinkle tops with poppyseeds. Bake for 15-18 minutes. The tops should be puffed and the center set.
Serve warm and enjoy!
