Freezing Dough for Perfect Dinner Rolls

✨ Ingredients:
• 2 1/2 cups warm water
• 2 tablespoons active dry yeast
• 1 stick (1/2 cup) salted butter, melted
• 2 teaspoons salt
• 1/2 cup sugar
• 1 egg
• 7 cups all-purpose flour
Instructions:
1️⃣ In a large mixing bowl, combine warm water and yeast.
2️⃣ Add melted butter, salt, sugar, egg, and flour. Mix until well combined, then knead for 10 minutes until the dough is smooth and elastic.
3️⃣ Transfer to a greased bowl, turning once to coat. Cover and let rise in a warm place for about 40 minutes, or until doubled in size.
4️⃣ Punch down the dough and divide it into equal portions to form rolls (this makes about 35 rolls). Place them on a greased baking sheet.
5️⃣ Cover and let rise again for 30 minutes, or until doubled.
6️⃣ Preheat oven to 350°F. Bake for 22-25 minutes, until golden brown.

It would be more beneficial to just reduce the recipe, cut it in half to save freezer space and ingredients
Freezing the dough might actually be beneficial to people who are watching their blood glucose.
I’m gonna try this, cut the recipe in half but I’ve been dying for some good yeast rolls, the ones we used to serve at my first job were the best ever but idk the recipe so I’ll give this one a go!!!
Did you cover them when you took them out of the freezer and put in a dish four hours
About freezing the dough, did you wait until after the first rise of 40 minutes, then weigh out and form 35 dough balls and then freeze?
If I wanted to add cinnamon when should I do that?
How did you get that many rolls with 7 cups of flour? I usually use 7 cups and didn't get that many rolls.
So what machine is that to mix the dough please?
