今回は、モチっとした食感のベーグルにチャレンジ
久しぶりで、作り方を忘れていたので調べながらがんばりましたが
水分を多くいれてしまったせいか、成形が難しく少し過発酵ぎみに…
ちょっとでこぼことした仕上がりになってしまいました。
レシピに”ライ麦”を入れたのですが、それもよくなかったかもしれませんね。
[ 材料 ]
・強力粉 360g
・ライ麦粉 40g
・はちみつ 12g
・塩 4ｇ
・ドライイースト 3g
・水 240ｇ
2時間ほどで焼きあがるベーグル
サンドイッチのバリエーションもいろいろ試せましたので
上達するように、こつこつと練習ようと思います。
